Topped with Red Lobster’s Cheddar Bay Biscuit mix, this cobbler is a smoky, cheesy delight that’s perfect for any occasion. ⸻ 🛒 Ingredients: • 1 stick (½ cup) unsalted butter • 2 lbs boneless skinless chicken thighs • 2–3 tbsp Prime 4 Backbone seasoning (or your favorite BBQ rub) • 1 (12 oz) bag frozen mixed vegetables (peas, carrots, corn, green beans) • 1 box (11.36 oz) Red Lobster Cheddar Bay Biscuit Mix (including seasoning packet) • 2 cups whole milk • 1 (10.5 oz) can cream of chicken soup • 2 cups chicken broth • ½ cup shredded sharp cheddar cheese (optional) • Chopped fresh parsley for garnish (optional)  ⸻ 👨🍳 Instructions: 1. Preheat your Traeger grill to 375°F (190°C). 2. Melt the butter in a 9x13-inch cast iron skillet or baking dish suitable for the Traeger. 3. Season the chicken thighs with Prime 4 Backbone seasoning. 4. Sear the seasoned chicken thighs in the melted butter on the Traeger until cooked through and slightly crispy on the edges. 5. Remove the chicken, chop into bite-sized pieces, and set aside. Leave the melted butter in the pan. 6. Layer the chopped chicken evenly over the melted butter in the pan. 7. Spread the frozen mixed vegetables over the chicken layer. 8. In a bowl, combine the Cheddar Bay Biscuit Mix (excluding the seasoning packet) with milk and shredded cheddar cheese (if using). Mix until just combined. 9. Pour the biscuit mixture evenly over the chicken and vegetables. Do not stir. 10. In another bowl, whisk together the cream of chicken soup and chicken broth until smooth. 11. Gently pour the soup mixture over the biscuit layer. Do not stir. 12. Bake uncovered on the Traeger at 375°F for 45–50 minutes, or until the top is golden brown and the biscuit layer is cooked through. 13. Optional: While baking, mix the reserved seasoning packet with 2 tablespoons of melted butter. Brush this seasoned butter over the top of the cobbler during the last 5 minutes of baking for extra flavor. 14. Remove from the grill and let it rest for 10 minutes to allow the layers to set. 15.
