Meal Prep Hack for Busy Professionals | Easy High-Protein Lamb Pot Pie!

In this video, I'm sharing one of my favourite meal prep hacks that will save you time and energy all week long – and all you need are glass bowls! This high-protein lamb pot pie recipe is simple, delicious, and perfect for meal prepping.🤤 Ingredients for 4 servings: 550g slow-cooked lamb shoulder (Coles Made Easy) 2 carrots, sliced into half moons 1 cup chickpeas 120g frozen peas 100g frozen spinach 500g frozen mashed potato Extra virgin olive oil spray Method: 1. Preheat the oven to 220°C. In a microwave-safe bowl, combine lamb with liquid and carrots. Microwave on high for 5 minutes or until heated through. Heat the mashed potato as per packet instructions. 2. Shred the lamb using two forks and transfer it to four ovenproof baking dishes. Add the peas, spinach, carrots, and chickpeas. Season with salt and pepper. 3. Top with mashed potato, roughing up the surface with a fork. Spray with olive oil and bake for 10-15 minutes or until golden and crispy.
