Instruction: 1. Soft boil the rib with salted water for about 15 minutes after the water started to boil. Water should be 1 inch above the rib + 1 TBS of Kosher salt. Once cook, remove the rib and let cool down then slice it into thin slices. 2. Boil a small pot of water then add the noodles. Cook for just about 3 minutes. Drain. Shock with cold tap water and drain; do it 2 times. Place the pot back on the heat-off stove to get the noodles less wet 3. While doing all the above, also prepare all the vegetables by washing and slicing. Cucumber can be sliced into thin slices or julienned with a peeler/mandoline slicer. 4. Thaw, remove tails and split each shrimp in half, depth wise. Splitting is optional but the texture of the roll is more balanced that way and that what authentic Vietnamese summer rolls should be. 5.
