Sourdough Bagels Ingredients: • 225g water • 10g salt • 100g sourdough starter • 20g honey • 450g bread flour Instructions 1. Mix the ingredients: In a large bowl, combine the water, salt, sourdough starter, and honey. Stir well to mix. 2. Add flour: Gradually incorporate the bread flour into the mixture until fully combined. 3. Knead the dough: Using a mixer, knead the dough for 7-8 minutes, or until it becomes smooth and elastic. 4. Shape the dough: Turn the dough out onto a clean surface and shape it into a ball. 5. Bulk fermentation: Lightly oil a glass bowl, place the dough inside, and cover it. Let it rise at room temperature for 6-8 hours, or until it doubles in size. 6. Divide the dough: Once the dough has risen, turn it out onto a surface and divide it into 6 equal portions. 7. Shape into balls: Shape each portion into a ball and cover them with a kitchen towel. Let them rest for 15 minutes. 8. Shape into bagels: After resting, shape each dough ball into a bagel. 9. Second rise: Place the shaped bagels on a baking sheet, cover with a towel, and let them rise at room temperature for about 3-4 hours or until they double in size.  10. Refrigerate: Transfer the baking sheet to the refrigerator and allow the bagels to proof overnight. On the next day, preheat your oven to 450°  11. Boil the bagels: Bring a pot of water to a boil, adding 1 tablespoon of honey to the water (this helps with browning). Carefully drop in the bagels—boil for 1 minute on each side. 12. Rest and top: Once boiled, place the bagels on a wire rack to rest. Add your desired toppings on both sides. 13. Bake at 450°F (230°C). Bake the bagels for 20 minutes, or until golden brown.
