Watch until the very end 🙊 Doing IF (intermittent fasting) lets me enjoy breakfast for lunch. 🍳 Egg & Cottage Cheese Wrap Recipe 👇🏼 Ingredients: Tomatoes Mushrooms Roasted red peppers (you can also use plain chopped red, yellow, or green peppers) Spinach 3-4 eggs (or just egg whites; just used 2 yolks out of 4 eggs here) Spring onions Cottage cheese Salt and pepper to taste Whole wheat tortilla Heat a non-stick skillet over medium heat and olive oil or avocado oil. When hot, add tomatoes, mushrooms, peppers, spinach, and spring onions. Add cottage cheese and stir fry for about 1-2 minutes until spinach is wilted. Add beaten eggs and season with salt and pepper to taste. Transfer to tortilla and fold it in like a lumpia or a burrito. Then put it in a toaster oven (turning half way) for about 5 minutes or until toasted. You can use a clean pan and just flip once to toast tortilla. Cut in the middle to let it cool down a bit before biting into it (see ending of this video 🙊) Makes 4. Notes: There will be a little liquid from the cottage cheese so make sure you drain it before transferring eggs to the tortilla. Also, my husband put sriracha sauce since he likes it spicy .
