Savory Jiffy Mix Bacon, Egg and Cheese Muffins: A Quick and Delicious Treat

INGREDIENTS • 1 pkg. “JIFFY” Corn Muffin Mix • 4 slices bacon, cooked and crumbled • 4 eggs • salt and pepper • 1/2 cup milk • 1/2 cup cheddar cheese, shredded • 3 Tbsp. margarine or butter, melted PREPARATION STEPS 1. Preheat oven to 400°F. Grease muffin pan or use paper baking cups. 2. Fry bacon until slightly crisp. Remove and drain on paper towels. Crumble cooled bacon and set aside. 3. In 2 tablespoons of bacon grease, scramble 3 eggs. Salt and pepper to taste. Set aside. 4. Combine muffin mix, 1 egg, milk, cheese, bacon and margarine or butter. Stir until combined. Fold in scrambled eggs. 5. Fill muffin cups 2/3 full. Bake 13 – 15 minutes.
