Ukadiche Modak, a traditional Maharashtrian sweet dumpling made with rice flour and a coconut-jaggery filling. Ingredients: For the Dough: 1 cup rice flour 1 cup water 1 tsp ghee A pinch of salt For the Filling: 1 cup grated coconut 1 cup grated jaggery 1/2 tsp cardamom powder 1 tsp ghee Instructions: Prepare the Dough: Boil water in a pan with a pinch of salt and 1 tsp ghee. Once the water boils, reduce the heat and add the rice flour gradually, stirring continuously to avoid lumps. Cover the pan and let it steam for a few minutes. Remove from heat and knead the dough while it’s still warm until smooth. Cover with a damp cloth to keep it moist. Prepare the Filling: Heat 1 tsp ghee in a pan and add the grated coconut and jaggery. Cook on low heat until the jaggery melts and blends with the coconut. Add cardamom powder and mix well. Let it cool. Shape the Modak: Take a small portion of the dough and shape it into a ball. Flatten the ball into a small disc and place a spoonful of the filling in the center. Pleat the edges of the disc and gather them to form a peak at the top, sealing the filling inside. You can use a modak mould for easier shaping. Steam the Modak: Place the modaks in a steamer and steam for about 10-15 minutes until they are cooked. Enjoy your delicious Ukadiche Modak!
