This is the most delicious chicken biryani recipe you will ever find. I hope you make this & enjoy with your family & friends Hyderabadi Chicken Biryani You can easily double the quantity Rice : 1. In water add spices ( cinnamon - 5inch , cardamom- 3 , black cardamom- 1, cloves - 4, caraway seeds , mace - 1, star anise - 1 ) along with coriander & mint leaves 2. Add salt (it should taste like sea water), oil 3. When water is getting boiled, add soaked basmati rice and cook till 80% 4. For 500gm rice take 2 to 3 lit water 5. It will take 3 to 4minute max to cook the rice Fried Onions : In a pan heat the oil and add 3 onions , cook on med flame till its light brown in colour.DO NOT ADD SALT, as it will make the onions mushy. Keep stirring otherwise it will get burnt. Then keep it aside on tissue paper Chicken: For 500gm chicken, add 1. Chili powder - 3 tbsp 2. Turmeric powder - 2 tbsp 3. Salt 4. Cardamom powder - 1/2tsp 5. Special Ginger garlic paste - 1 1/2 tbsp 6. Spice/biryani masala powder - 1tsp 7. Yogurt - 150gm 8. Lemon juice - 1/2 tbsp 9. Fried crushed onion 10. Butter -1tbsp 11. Green chili crushed -3 12. Mint & coriander leaves - 1/2 cup 13. Nutmeg powder - 1/4th tsp Marinate for an hour or you can do this overnight (Special ginger garlic paste : Grind 50 gm ginger, 50 gm garlic , 10 small pieces of cinnamon, 4 cloves, 3 cardamom, few mint & coriander, salt, turmeric all together. Use the mentioned quantity) Cook the chicken in fried onion oil till it’s 80 % cooked Saffron Slurry : In a pan add few strands of saffron with 2 green chilies, 1 tsp ghee, 1tsp onion oil & 1/2 cup milk and set it aside Layering : In a pan ghee, rice, chicken, rice,layering ingredients, chicken, rice, layering ingredients along with charcoal with curry oil and give dum In the final layer use ghee/butter & biryani masala powder Dum : cover the pan with aluminium foil or you can use wheat dough to seal The idea is to not let the inside air out, so the chicken & rice are cooked to perfection Heat an iron tawa for 10 minutes on high flame. Then put biryani pot above it & let it cook for 5 minutes on high flame, so that heat goes through the pot Then lower the flame to minimum & cook for another 30 minutes Turn off the gas & let it sit for 10 minutes.
