The first one is a high-protein chickpea flour replacing eggs and the second one is a psyllium husk acting as a binder. Instagram   / glutenfreegastronomist   Vegan & Gluten Free Everyday Sandwich Bread Recipe Ingredients 480g Gluten Free Flour Blend 50/50 * (recipe below) 50g chickpea flour 35g psyllium husk or 22g psyllium powder** 10g instant yeast or 12g active dry yeast 10g gluten free baking powder 25g sugar 7g salt 30g oil 550g warm water (110F/43C) Method To activate yeast - mix active dry yeast with sugar and warm water. Leave it for 10 minutes to get bubbly (skip this step if using instant yeast). In a large bowl sift and mix all dry ingredients. Add all wet ingredients and stir well by hand until smooth or use electric mixer. Let it hydrate for 10-15 minutes and mix again. Transfer dough into oiled loaf pan, cover and let it rise for about an hour. Pre-heat the oven to 375F (190C). Brush dough with oil and bake for 60-70 minutes. Bread is done when it feels light and sounds hollow if you tap. You can also use an instant read thermometer and measure the internal temperature. It should be at 210F if your bread is ready. Take bread out of pan and cool completely on wire rack.
