
2 Ingredient Salsa Chicken
By the time Thursday comes around, I need a meal that involves: ✅ No thought ✅ Little work ✅ Uses up leftover ingredients from the week Slow Cooker Salsa Chicken is exactly that: put chicken in a slow cooker, dump a jar of salsa on top, let it cook 6-8 hours on slow (or 3-4 hours on high), and you have amazing endless possibilities where to go from here: 🥣 I made a bowl the first night with rice I cooked in 90 seconds in the microwave along with beans, avocado, cheese, lime and cilantro that all needed to get used 🌮 Leftovers went on to become tacos and quesadillas during the work week for lunch 🍲 You can also use the leftover shredded chicken in soups, quick enchiladas, omelettes, or simply throw on top of a salad 🥗 Dinner doesn’t have to be fancy, but it should be tasty and have a yummy mix of fiber & protein to keep you satisfied.
