QUICK & EASY LEMON DRIZZLE CAKE | Gluten + dairy free!

This lemon drizzle cake has become a firm favourite in our house...it's gluten & dairy free, super moist and can be whipped up in no time! Which really helped today after getting back later than expected from my parents home! I originally found the recipe over on Gluten Free Cuppa Tea and after a few tweaks (mainly with converting to cups) the recipe below is my go to! INGREDIENTS: 3/4 cup sugar (I use golden caster) 3/4 cup butter (dairy free alternatives work great) 2 large or 3 small lemons 3 eggs 3/4 cup gluten free self-raising flour (slightly heaped cups) 2/3 cup almond flour 1/2 cup sugar (demerara, caster etc for topping) (I used goats butter today as we can tolerate this, however usually I make this with a dairy free butter alternative and it works perfectly!)
