गाजर का हलवा कुकर में | Instant Gajar Halwa | Gajar ka Halwa in Pressure Cooker | No Grate Halwa

Hare Krishna!! Try out this super popular Indian dessert namely, Gajar Ka Halwa or Carrot Halwa which has a delightful flavour of carrots combined with creamy ingredients to give a delicious dessert. Prep time: 10 minutes Cooking time: 35-40 minutes Serves: 5-6 people Ingredients: 2 kg carrots 4 tbsp ghee + 1 tbsp ghee 2 cups / 1ltr milk 1 cup Desi Khand 1 Cup Milk Powder or khoya 1 tsp cardamom powder 2 tbsp chopped Dry fruits (Almond,cashew,pistachois,chironji,Raisins) Method: Wash the carrots & then trim their tops & bottoms, further peel the carrots & grate them using a large hole grater then transfer them into a bowl. Set a pressure cooker over high heat & add the ghee, let it get slightly hot & then add all the grated carrot, stir well & cook for 3-4 minutes. The carrots will release its moisture so cook until the water evaporates. Further add the milk, stir once then pressure cook over medium flame only for 1 whistle then switch off the flame & let the cooker depressurize naturally. Next, check the whistle & open the lid, stir well & then switch on the flame to medium high & cook until the milk reduces, this process will take 10-12 minutes, make sure you keep stirring the halwa. Once almost all the milk has reduced, add the sugar & cardamom powder, stir well & cook it again for 4-5 minutes, the sugar will release its moisture & the halwa will get slightly runny again so cook until it thickens up again. Do not overcook the halwa or it will become very tight, almost into barfi texture, only until the water from sugar evaporates & the halwa looks a bit shiny then switch off the flame. Heat a pan, add the ghee into it & let it get slightly hot, then add the almonds & cashews & fry them until they turn light golden brown, keep stirring them. Once the nuts are almost about to turn light golden brown add the raisins & stir briefly. Pour the ghee & nuts mixture over the halwa & stir well. Your gajar ka halwa is ready, let it rest for a couple of minutes, it will soak up all the ghee, heat it up before serving or have as it is, I personally like to have hot halwa with a scoop of vanilla ice cream.
