INSTANT POT BLACK BEANS & RICE | VEGAN

INSTANT POT BLACK BEANS & RICE vegan | gluten-free | oil-free servings: 2-3 Ingredients: 1 cup brown rice 1 cup black beans water (enough to cover the rice and beans by about ¾ of an inch) ¼ onion (sliced) 2 cloves garlic (minced) 2 teaspoons cumin ½ teaspoon chili powder 2 tablespoons nutritional yeast 1 teaspoon sea salt ¼ teaspoon black pepper salsa or hot sauce (optional) Instructions: 1. Add the rice and beans to the Instant Pot and cover with at least half an inch of water. Stir in the remaining ingredients until well combined. 2. Set your Instant Pot to manual mode for 25 minutes on high pressure, ensuring the valve is set to sealing. 3. Once the 25 minutes is up, let the timer count up to 10 minutes, then carefully turn the valve from sealing to venting. 4. Let the pressure release for another minute, then open your Instant Pot and give the rice and beans a good stir. Enjoy!
