
Instant Pot Vegan Mung Beans ( Moong Dal) and Rice || Easy and Tasty Vegan Recipes
Ingredients 1/4 cup olive oil or any oil 1/2 cup chopped onion 1 cup mung beans, washed and soaked 3-4 hours 1 cup basmati rice washed only 1 tsp turmeric 1 1/2 tsp salt or to taste 1/4 tsp black pepper 3 1/2 cups water Note: If you like, add cumin seeds, curry powder, or other spices. Turn the sauté on medium. When the pot is hot, add the oil. My pot size is 6 qt. Add the onion and cook until it turns brown. Add mung beans and mix well. Pour in 2 cups of water, mix, cover with a regular lid, and cook on high heat until the beans are about 75% done. Add rice, salt, and spices, then mix well. -Add 1 1/2 cups of water. The rice and beans should be completely submerged. Mix everything well, then turn off the sauté mode. Wipe the top of the inner pot and ensure everything is in the correct position, including the plastic ring and the knob in the lock position. If the safety pin is up, push it down with your finger; otherwise, the pressure will not build properly. Press the rice button for the automatic setting, which should take about 12 minutes.
