LOADED BAKED SWEET POTATO INGREDIENTS *2 Jumbo sweet potatoes *half cup broccoli flowerets *half cup medium-sized shrimp *half cup Ricotta cheese *half cup feta cheese *half cup mozzarella cheese *1 small red bell pepper salt to taste *granulated onion to taste Miss Edna Mae's down-home shrimp seasoning COOKING INSTRUCTIONS 1)Pre heat oven to 400° 2)Wash potatoes off good 3) wrap in aluminum foil 4) Place in oven & cook until very soft( about 1.5 hrs. 5)Peel shrimp & season with Miss Edna Mae's down-home shrimp seasoning 6) Heat a skillet on medium high & drizzle with oil. ( I prefer extra virgin olive oil) 7) Add shrimp to skillet & cook 2-3 minutes on each side. 3-4 minutes for a crisp seared. Once done, set aside. 8) Heat another pan medium-high heat & drizzle with oil. Add broccoli flowerets & season with salt & granulated onion to taste. stirring frequently to ensure even coating & cooking. About 3-5 minutes. Watch for medium-light green broccoli color. Remove from skillet & set aside. 9) Slice red bell pepper into small thin strips. And once more heat skillet to medium high & drizzle with oil. Sauté peppers add salt to taste until slightly limp. Set aside. 10) Mix the 3 cheeses shrimp & broccoli in a bowl until we'll combined. 11) Once potatoes are done, allow it to cool. Once cooled, split down the center & fluff by squeezing the sides in & and up, causing the insides to fluff up. Create a tunnel down the middle and load with shrimp/broccoli mixture. 12) Heat oven to 300° and put potatoes in. Warm until cheese mixture is a smooth cream texture. Remove from oven. Allow to cool a bit. Enjoy!
