Haleem recipe: ✨Haleem Spice Mix 1-2 bay leaf / Tej pata 2 cinnamon / Darchini 2 Mace / Javetri 4-5 cardamom / Elaichi 4-5 dried red chilis / Shukhna Morich 5-6 cloves / Long 1/4 tsp black peppercorn / Gol Morich 1/2 tsp Caraway seeds / Shahi Jeera 1/2 1tsp fennel seeds / Saunf 1 tsp Indian 5 spiceo / Panch Phoron 1 tbs coriander seeds / Asto Dhoniya 1 tsp red chili powder / Laal Morich Powder 1tsp paprika (Kashmiri red chili powder) 1 tsp turmeric powder / Holud ✨ Roast all ingredients except red chili and turmeric, then grind. Add red chili and turmeric powder to the mix. ✨Cooking the Meat with Haleem Lentil mix 1.36kgs / 3lb beef with bone or mutton 3 tbsp of Halim Spice Mix Oil 3 medium onions chopped (1 for beresta/tadka/baghar) 2tsp Garlic paste 2tsp Ginger paste ✨Marinate all the above ingredients, cover and cook and until the oil has separated and the meat is tender ✨ Once the meat is fully cooked, add 2.5 cups of the cooked lentil mix, and refrigerate the rest for later use. You can also adjust the mix to your desired taste and consistency. Add 1-2 cups of water if needed. I didn’t add any as the lentil mix was a little watery. ✨Before serving: Fry onion until golden brown and then add chaat masala. Pour it on top of the haleem and garnish with cilantro, ginger and green chilies ✨Lentil & Rice mix 1/3 cup each ⁃ Barley ⁃ Chana daal (booter daal) ⁃ Haleem wheat ⁃ Masoor daal (red lentil) ⁃ Moong daal (split mung) ⁃ Pulao chaal/ Aromatic Rice/Basmati Rice ⁃ Toor daal (kheshari daal) ⁃ Urud daal (Mashkalai daal)(I didn’t have any) ✨Spices 2 bay leaf 1 tsp turmeric powder 1tbs salt Method: Wash the lentils and rice, add 10 cups of water, and cook with the Bay leaf, turmeric and salt until soft.
