With Christmas round the corner plum cake is must. Today we are making 1kg plum cake. This is eggless cake and these are the perfect measurements to make 1 kg cake. It looks nice and tastes just awesome!! This cake turns out nice, spongy, soft and moist. We already have seen plum cake recipe. This is yet another delicious addition to the list. You can try this recipe at home and drop a comment for me. DO not forget to like, share and subscribe. Ingredients: • 1/4 cup / 30 gm Cashew nuts • 1/4 cup / 40 gm dry Fig • 1/4 cup/ 55 gm Tutti frutti • 1/4 cup / 40 gm black Raisins • 1/4 cup / 30 gm dried Cranberries • 1/4 cup / 50 gm dried Apricots • 1/4 cup / 35 gm dried Kiwi • 1/4 cup / 25 gm Almonds • 1 cup / 240 ml Orange juice • 1/2 cup / 120 ml Oil • 1 1/2 cup / 200 gm Maida • 1/2 cup / 50 gm powdered Sugar • 3 tbsp / 22 gm unsweetened Cocoa powder • 1 tsp / 4 gm Baking powder Method: • Soak cashew nuts, dry fig, tutti frutti, black raisins, cranberries, dried apricots, dried kiwi, almonds in orange juice overnight or at least 4-5 hours. • You can make combination of walnuts, cashew nuts, almonds, black raisins and tutti frutti in place of all above ingredients. • You can use peanuts also. • Mix 1 cup water, juice of 1 lemon and 2 tsp sugar well and use it in place orange juice. • You can use 1 cup rum too. • Add oil and mix well. • You can us butter in place of oil. • Mix maida, powdered sugar, unsweetened cocoa powder, baking powder and strain into the wet mixture. Mix well. • Line up a baking tin with butter paper and transfer the batter into it. • Tap the tin well and garnish with cashew nuts. • Preheat the oven at 180 Deg C for 5 minutes and transfer the cake tin into it. • Bake the cake at 180 Deg C for about 40-45 minutes. • You can bake the cake in cooker or kadhai too. Preheat kadhai or cooker on high heat for 5 minutes and bake the cake on medium heat for about 40-45 minutes. • Let the cake cool down completely and loosen the edges with a knife. • Flip over the tin into a dish and plum cake is all ready.
