Boiling Hot Water – 500ml. Boiling Hot Water – 100ml. Water – 100ml Jaggery (Gud) – 200gms Sugar – 50gms Refined Oil – 2tsp Hing – A Pinch Melon seeds – 1tbsp Cashew Nuts – 6-8 Banana – 1 (cut in thin round pieces) (Optional) Ginger – 1inch piece Red Chili Powder – 1tsp Roasted Cumin Powder – 1tsp Black salt to taste Red Food Colour – A Pinch (optional) IMPORTANT TIP:- Use seedless Tamarind for convenience. We can replace ginger with ginger powder or ginger paste. Just cut the ginger into pieces if the blades of the Mixer jar are not enough sharp. Always add roasted nuts or seeds to experience enhanced flavor & shelf life. Roast nuts on low heat. Notice the spluttering sound as well as the increasing size of the seeds. Use both Jaggery and sugar for best results. Red Food Colour gives bright colour to the chutney. Get a bridge test done. We don’t need any string consistency. It should not fall in a flow. Store it in a jar and refrigerate upto 6months. You can add banana cut in thin round pieces in to it. Enjoy this chutney with Dahi Vada, Golgappe, papari Chat, Bhel Puri, Kachouri and many more. Recipe Notes:- 1. Cook chutney on medium high heat. 2. We can replace ginger with ginger powder or ginger paste . 3. Use both Jaggery and sugar for best results. 4. We can add our choice of seeds or nuts for nutty flavor if we want. 5. Always add roasted nuts or seeds to experience enhanced flavor.
