A classic cheesecake with a delicious twist! - Burnt Basque Cheesecake by Chef Rapika Ingredients: 430gm Cream Cheese at room temperature 140gm sugar 3 eggs 1/4 tsp salt 1 tsp vanilla 270gm heavy cream 17gm cake flour Method: 1. Preheat oven at 220 deg Celsius with fan on. 2. Using a paddle attachment, beat cream cheese and sugar together for approximately 5 mins or until the cream cheese and sugar mixture is soft. 3. Add 1 egg into the cream cheese mixture, beat till the egg has incorporated. Do the same for the 2 eggs. 4. Once all the eggs have been incorporated, set aside the mixture. 5. Pour a little bit of the cream and whisk in with the cake flour. Gradually add the rest of the cream and whisk them together. 6. Afterwards, pour this cream and flour mixture into the cream cheese mixture. Mix the two mixture together till its fully incorporated. 7. Using a sifter, sift the cream cheese mixture to ensure there are no clumps. 8. Get a large parchment paper and placed it in the 6” tin. Let the parchment fold and crease on the side of the tin. 9. Pour the batter in the tin, leave only a 1 inch gap at the top. 10. Bake for 22 mins or till the top is dark. 11. Let it cool to room temp before unmolding. For a soft center, serve at room temperature. For a more firm and creamy texture, let it set for 4 hours in fridge and serve cold. ***** #StayHomeTW #TampinesWest #TWCC #WestIsBest
