Zucchini Wrap 🤤 Ingredients: 1 Zucchini ½ cup Mozzarella cheese, grated Pinch of salt Pinch of pepper Light drizzle of avocado oil (or extra virgin olive oil) Instructions: 1. Preheat oven to 350°F (175°C). 2. Line a baking sheet with parchment paper. 3. Using a mandoline, slice the zucchini as thinly and uniformly as possible. Arrange the zucchini slices on the parchment paper, overlapping them slightly so there are no gaps, forming the base of the wrap. 4. Drizzle the zucchini lightly with avocado oil. Season with a pinch of salt and pepper. Sprinkle the grated mozzarella cheese evenly over the zucchini. 5. Bake for 25 minutes, until golden brown. Let the zucchini wrap cool to room temperature on the baking sheet.
