
Hash Brown Breakfast Casserole - A wonderful casserole for breakfast or dinner; can be made ahead!
Hash Brown Breakfast Casserole 3 cups fresh or frozen hash brown potatoes 1 pound sausage 1 medium onion, chopped finely 4 cups shredded mild cheddar cheese 12 eggs, beaten 2 cups milk 2 teaspoons minced garlic 1/2 teaspoon salt (or to taste) 1/2 teaspoon pepper (or to taste) Thaw hash browns if they are frozen. Preheat oven to 350° Spread the hash browns in a greased 9” x 13“ baking dish. Brown the sausage and onion in a skillet; Drain off excess grease. Spread the sausage evenly over the potatoes. Sprinkle the cheese on top of the sausage. Beat the eggs, milk, garlic, salt, and pepper in a large bowl. Beat well. Pour over the cheese.
