HERE’S WHAT YOU’LL NEED: Base Layer: • 1 cup desiccated coconut • 1/2 cup almond flour • 1/2 cup Naked Harvest Chocolate Swirl Plant Protein • 1/3 cup melted coconut oil • 3 tbsp maple syrup Caramel Filling: • 2 cups Medjool dates, pitted • 2/3 cup melted coconut oil • 1/2 cup almond butter • 2 tsp vanilla extract • 1 tsp salt Choc Topping: • 1/2 block dark chocolate (chopped or chips) • 2 tbsp non-dairy milk HERE’S HOW TO MAKE IT: 1. Soak dates in hot water for 20 minutes. Drain and pat dry. 2. Line a 20x20cm pan with parchment paper. Mix coconut, almond flour, protein powder, coconut oil and maple syrup in a bowl. The mixture should be crumbly but stick together (if too dry, add more coconut oil). 3. Press into the base of the pan. 4. To prepare the filling, blend soaked dates, melted coconut oil, almond butter, vanilla extract and salt in a food processor until smooth. If needed, add a splash of hot water to help blend. Spread the caramel over the base and chill for 90 minutes. 5. Topping: Melt dark chocolate in the microwave in 30 second intervals. Stir in non-dairy milk until smooth. 6. Spread over the set caramel layer. Chill for 20 minutes until the chocolate hardens. 7. Lift the slice out using the parchment paper and cut into 16 squares.
