Ingredients: 600 g / 21.16 oz / 1.32 lb / about 4 ¾ US cups bread flour (12% protein) 4 g / about 1 ¼ tsp instant dry yeast 470 ml / 15.89 fl oz / 1.04 lb / 2 US cups water (18–20°C / 64–68°F) 6 g / about 1 tsp salt US cup measurement: 240 ml is used. Preparation time: About 10 minutes active work First rest: 30 minutes Folding time: About 1–2 minutes Refrigerator rest: At least 5 hours Shaping time: About 5–7 minutes Final proof: 20 minutes Baking time: About 25 minutes Total time, excluding refrigerator rest: About 1 hour 25 minutes Bake in a preheated oven at 220°C / 428°F, using top and bottom heat, on the second rack from the bottom.
