Low Carb, Pumpkin Loaf- gluten free & anti-inflammatory. Subscribe for more weight loss content. RECIPE: 1 cup pumpkin puree 3 eggs lightly beaten 2 tsp vanilla 1/4 cup maple syrup 1/4 cup honey *1 1/2 cups almond flour PLUS 1 cup pulverized oats (see below) 2 tsp pumpkin pie spice 1 tsp baking powder Topping: pumpkin seeds chopped pecans melted dark chocolate chips and maple syrup to drizzle *To pulverize the oats, simply blend the dry Oates in a food processor until powdery. Option: You can also leave out the oats and use 2 1/2 cups almond flour instead. Directions: 1. Beat eggs slightly then mix together all the wet ingredients in a large bowl. 2. Add in the dry ingredients and mix. 3. Pour batter into a lined loaf pan and drizzle with melted dark chocolate chips then top with pumpkin seeds and pecans! 4. Bake at 350 F for 50-60 min. 5.
