Curry puffs, or karipap, are a popular dish in Singapore and Malaysia. This dish is similar to a pastel, but has a layered surface filled with minced chicken, potatoes, and curry spices. In addition to the curry variant, I will also make a spicy chicken filling using chili sauce from Eatsambel. Spicy Chicken Curry Puff Recipe (24 pcs) Water dough: 250 g medium-protein wheat flour 50 g margarine 120 ml water 1 tbsp sugar ½ tsp salt Oil dough: 180 g medium-protein wheat flour 30 g margarine 70 g shortening Curry filling: 2 tbsp oil ¼ onion, chopped 4 cloves garlic, chopped 1 stalk spring onion, sliced 150 g minced chicken 150 g potato, boiled and diced 100 g green beans, cut into 1 cm pieces 100 g carrot, boiled and diced 70 g Japanese curry roux 1 tbsp sugar Flavoring 500 ml water Spicy chicken filling: 50 g glass noodles, soaked in cold water 250 g chicken breast, boiled and shredded 150 g potato, boiled and diced 3 stalks spring onions, sliced 5-6 tbsp Eat Sambal Geprek Pedes Ngaco 50 ml water Sugar Salt Pepper Flavoring Other: 3 boiled eggs 100 g mozzarella Oil for frying Steps: 1. Mix all the water dough ingredients until well combined, knead briefly, then wrap in cling wrap and let sit for at least 15 minutes. 2. Mix the oil dough ingredients until well combined, then wrap in cling wrap. 3. Flatten the water dough to about 40 x 30 cm, and flatten the oil dough to about 20 x 15 cm. 4. Place the oil dough diagonally on top of the water dough and fold it over the oil dough. 5. Roll out lengthwise, then flatten again to about 40 x 30 cm and roll again. 6. Cut the dough into 24 equal pieces, cover with cling wrap or a clean cloth. 7. For the curry filling, sauté the onions, spring onions, and garlic in oil, then add the chicken and cook until browned. 8. Add the potatoes, carrots, and green beans and stir. Mix well. 9. Add water and Japanese curry roux. Season with sugar and flavoring to taste. 10. Cook until the liquid has evaporated and thickened. Let cool. 11. For the spicy chicken filling, sauté the spring onions in a little oil until fragrant, then add the Eat Sambel Geprek Pedes Ngaco and sauté briefly. 12. Add the chicken, sliced glass noodles, and potatoes. Stir well. 13. Add a little water, season with sugar, salt, pepper, and flavoring to taste. 14. Cook until the liquid has evaporated, let cool. 15. Flatten the dough and add the filling. Add a boiled egg or mozzarella. Fold and seal the edges using your hands or a mold. 16. Prepare the oil for frying, then fry over medium-low heat until golden brown and drain. 17. The curry puffs are ready to serve.
