Tofu Jjaguri by Chef Jia Choi l Vegan

Tofu Jjaguri is not a soup neither a stew. This dish is a unique take on tofu that combines tofu and vegetable mixture. Once you have prepared all the ingredients, this dish is really rewarding to put together. This Jjaguri is one of those homey, comfort food that people love and it can be whipped up in 30 minutes or less. -------------------------------------------------------------------------------------------------------------------------------------------------------------- Tofu Jjaguri Ingredients 1block (300g) tofu 1stalk green onion 100g zucchini 1 shiitake mushroom 80g enoki mushroom 1 green chili(optional) 1 red chili(optional) 2 tablespoons vegetable oil 1 tablespoon sesame oil Kelp broth: 1 cup of hot water + 10cm X 5cm dried kelp Sauce 1 1/2 tablespoons doenjang (Korean soybean paste) 1 teaspoon gochujang (Korean chili paste) Instructions 1. Break dried kelp into small pieces. Add it to boiling hot water. Set aside. 2. Thinly slice green onion. Cube zucchini and shiitake mushrooms in small pieces. Take the root of enoki mushroom and chop into 1cm size. Chop chilies. 3. Add vegetable oil to the pan. Put sliced green onion to the pan and heat it over medium heat. Stir fry for about 3 minutes, until green onion is translucent. 4. Add zucchini, shiitake mushrooms and chilies to the pan. Stir fry for 3 minutes, until they are half cooked. 5. Transfer stir- fried vegetables to the bowl. Season them with doenjang and gochujang. Put it aside. 6. Place tofu on the cutting board or plate. Cut about 1/2 of the height of the tofu horizontally and vertically into small squares. Add sesame oil to a small thick pot. Transfer tofu to the pot. Add vegetable mixture(sauce) along with chopped enoki mushrooms on the top of tofu. Pour half cup of kelp broth. Heat the pot over medium heat and bring it to a boil. Reduce the heat and simmer it with lid on for 5 minutes. 7. Turn off the heat. Serve hot with rice.
