
Korean Steak Tartare | 육회 with 브루노 브루니
It is a special treat for me to introduce Bruno Bruni on our channel today. He is a multi-talented actor and celebrity, appearing on a variety of TV programs in Korea. He has a great passion for cooking and know how to make many wonderful Korean dishes. Today, he will share his recipe for the Korean style steak tartare or 육회. This is a very popular dish in Korea that is usually served as an appetizer or even as a main dish. It goes well with Korean rice wines and as such, it is one of the most favorite side dishes for drinking. You can also serve it over a bowl of rice with other vegetables as raw beef bibimbap, or 육회비빔밥. Traditionally we usually add only Asian pears and pine nuts to the sliced raw beef. Some only use sesame oil and salt as seasoning while others prefer the soy sauce based seasoning. It is up to your own personal preference. It is essential to have truly fresh beef for this recipe. I usually ask my butcher for the beef sirloin cut that has been specially prepared for this purpose. Should be tender and low in fat and muscle. I would highly recommend that you buy high quality beef as 90 percent of this recipe depends on having the right type of beef. Please also be careful when handling raw beef on your cutting board. Be sure to use separate boards to cut vegetables and to prevent the ingredients from touching each other during the prep process. Although it does require extra attention to hygiene, it is sure worth the effort. Hope you will enjoy making it for your family. ✔️Ingredients: 300 grams of raw beef filet, cut into bite sized slices. 1/2 Asian pear, 1/2 carrot, 1/2 yellow melon, all julienned. 1/2 cup of baby greens or arugula leaves. Yellow melon is optional and you can substitute with red onion. 1 tablespoon of pine nuts and 1 tablespoon of walnuts ✔️For the seasoning sauce: 2 tablespoon of soy sauce, 2 tablespoon of honey or sugar, 4 tablespoon of sesame oil, 2 tablespoon of grated roasted sesame seeds, and 3 tablespoon of minced garlic. Mix well and add freshly ground pepper and 1 stalk of chopped green onions. Lightly coat the beef with the sauce and plate over the bed of fresh vegetables. Sprinkle pine nuts and walnuts. Top with one egg yolk and sprinkle some pecorino cheese before serving.
