Cajun Shrimp & Sausage Pasta Ingredients for shrimp 1 lb. large shrimp, peeled and deveined Kosher salt & black pepper, to taste Ingredients for the rest 2 Tbs olive oil 1 lb sliced andouille sausage 1 lb fettuccine pasta 1/2 onion, thinly sliced 1 red bell pepper, thinly sliced 1 Tbs Cajun or Creole seasoning 1 tsp brown sugar 2–3 cloves minced garlic 1 tsp oregano 1/2 cup crushed tomatoes 1 cup chicken broth 1 cup heavy cream 2/3 cup grated Parmesan 1 Tbs parsley, chopped (for garnish) Directions Season the shrimp with salt and black pepper. Heat 1 Tbs of olive oil in a large skillet over medium-high heat. Add the shrimp and cook for about 1-2 minutes per side, until they turn pink. Remove from the pan and set aside. In the same skillet, add 1 Tbs of olive oil. Add the sliced andouille sausage and cook for 2-3 minutes until browned. Stir in the onion & red bell pepper and sauté for about 3-4 minutes until softened. Add the garlic, Cajun seasoning, brown sugar and oregano. Cook for another 30 seconds. Pour in the crushed tomatoes and chicken broth, stirring to deglaze the pan. Lower the heat and add the heavy cream, stirring until well combined. Simmer for 3-5 minutes, allowing the flavors to blend. While the sauce is simmering, cook the fettuccine pasta according to package instructions. Drain and set aside, reserving 1/4 cup of pasta water if needed for the sauce. Stir the grated Parmesan cheese into the sauce, allowing it to melt. Add the cooked shrimp back into the pan. Toss in the drained pasta, mixing everything together. If the sauce is too thick, add a little reserved pasta water to reach your desired consistency. Plate the pasta and garnish with chopped parsley.
