Hwe Dup Bap (회덮밥) | The Korean Version of a Poke or Sushi Bowl
Both poke bowls and bibimbap have taken the world by storm and are widely enjoyed across the world for their freshness, easy one bowl eating situation and delicious combination of flavors That’s why it is truly confusing to me why Hwe Dup Bop isn’t equally as popular, since it is really a combination of the two You can get the best of both worlds with loads of fresh veggies, raw fish and a delicious gochujang based sauce that brings it all together It’s been a favorite of mine way before I tried or heard of poke bowls, so I hope you’ll give it a try Ingredients (2 servings) Chojang (red pepper sauce) - 5 tbsp gochujang (Korean red pepper paste) - 4 tbsp white vinegar - 2 tbsp soy sauce - 3 tbsp sugar - 2 tbsp sesame oil - 4-5 cloves of garlic Hwe Dup Bap - Sushi grade fish of choice (enough for two servings) - Flying fish roe - 2-3 red leaf lettuce leaves - 1/3 one large cucumber - 1/4 of a red onion - 1 pack of radish sprouts - 1 Korean red or green pepper - Rice Recipe (2 servings) 1 Finely mince the garlic and combine with gochujang, vinegar, soy sauce, sugar and sesame oil to make chojang 2 Chop lettuce into bite sized pieces, cucumbers into matchsticks, red onion into thin slices and green pepper into small pieces 3 Cut sushi grade fish into bite sized pieces or cubes 4 To assemble, start with rice in a bowl and top with all the vegetables, fish and flying fish roe 5 Top with desired amount of chojang and mix well before eating Music Erik Fernholm / Before You Wake Up / courtesy of Roots and Recognition / View of the Park / courtesy of #hwedupbap #회덮밥 #koreanfood
