We're getting ready for Christmas around here with some yummy holiday recipes! We'll be working ahead on Christmas morning breakfast with scratch-made sausage gravy and easy overnight cinnamon buns. I'll also be sharing some easy party sides including a colorful salad that is as delicious as it is beautiful, a decadent turtle cheesecake (with my easy, go-to base recipe) and a sweet potato casserole that is sure to get you all the compliments this Christmas! SCRATCH-MADE SAUSAGE GRAVY: 1.5 - 2 lb ground sausage 4 Tbsp. flour 3-4 cups milk Brown the sausage in a large skillet over med/hi heat. Drain off any excess grease. Add 4 Tbsp of flour and cook over medium/low heat for 1-2 min. Add 1 cup of milk, stirring to deglaze all the cooked on bits from the pan Add 2 more cups of milk, stir and return heat to med/hi to simmer and thicken. Finally add the last of the milk until you reach your desired gravy consistency. Salt & Pepper to taste OVERNIGHT CINNAMON BUNS ("Christmas Morning Rolls"): Here's the link to my original recipe with the butterscotch pudding mix (sounds weird but it's so good!): https://rustichoney.com/overnight-cin... Here's the version I made today: 1 stick butter 3/4 cup brown sugar 1/4 cup sugar 1 tsp. vanilla 1/2 tsp. salt 15 frozen dinner rolls Butter to coat your pan (remember my mistake! Grease your pan well!) Melt in a small sauce pan the butter, sugars and salt. Bring to a simmer, add vanilla and remove from heat. Pour over the frozen dinner rolls and allow to rise at least 5 hours or overnight covered lightly with a towel or plastic wrap. Bake at 350 for 20-25 minutes. Remove from oven and immediately and very carefully, invert your pan of rolls onto another platter or dish. Cool a few minutes and then top with this cream cheese icing: CREAM CHEESE ICING: 1/3 bar of cream cheese (3-4oz) 2-3 Tbsp milk 1-2 tsp vanilla extract About 2 cups of powdered sugar (I tend to eyeball this - add more or less if needed) Use a mixer to blend the cream cheese and milk first, then add in the vanilla and one cup at a time of the powdered sugar until the desired consistency is achieved to ice your rolls. SWEET POTATO CASSEROLE: Inspired by this recipe: https://www.thepioneerwoman.com/food-... MY VERSION (for two large 9 x 13 pans): 10-12 medium sweet potatoes (washed, baked and peeled) 1.5 cups sugar 1.5 cups milk 4 eggs 2-3 tsp vanilla 2-3 tsp salt (Mix the above together and pour into greased baking dishes) Topping: 2 sticks of butter (1 cup) 2 cups brown sugar 2 cups pecans 1 cup flour Use a pastry cutter to break up the butter and mix this crumble together. Could also grate in the butter and mix it up. Top your potatoes with this topping. Refrigerate until ready to bake if making ahead. Bake (from cold) at 400 degrees for 20-30 minutes covered and another 10-20 minutes uncovered until heated through and topping is golden. If baking right away baking time will be much shorter!
