Easy 5-Ingredient Coconut Almond Macaroons are so chewy and delicious and take only minutes to make! Add a Cherry on top for an even prettier version! Recipe yields 3 Dozen Cookies. Coconut Almond Macaroon Recipe: 7 ounces Grated Almond Paste 2 Cups Powdered Sugar 14 ounces Sweetened Flaked Coconut 1/2 Cup Egg Whites, room temperature 1/8 Tsp Salt, optional 1 Tsp Vanilla 1/2 Cup Melted Chocolate for Drizzling, optional Preheat Oven to 325F. Line 3 baking sheets with parchment paper. In a medium bowl, beat egg whites, vanilla, and pinch of salt until soft peaks form. Don’t overbeat until dry! Takes about 2 minutes. In a separate larger bowl, beat Almond Paste, sugar, and coconut until the texture of small crumbs. Gently fold the egg mixture with the almond paste mixture. Drop tablespoons onto baking sheets one inch apart. Bake on the center rack for 14-18 minutes, rotating halfway through, until lightly browned on bottom and firm to the touch. (Usually takes 16 minutes) Remove from oven and let cool on baking sheet until set up before removing to wire racks to completely cool. Optional: Drizzle with melted chocolate.
