Pork Carnita Roast Ingredients: 3 lb pork roast 2 tbsp olive oil 1 1/2 tbsp lime juice 2 to 3 tbsp Dijon mustard 1 tbsp chili powder 1 1/2 tsp ground cumin 1 tsp salt 1 tsp lemon pepper (or black pepper) 1 tsp smoked paprika 1 tsp garlic powder 1 tsp onion powder 1 tsp brown sugar 1/2 tsp oregano 2 tbsp Tajín seasoning Instructions: Preheat Your Oven: Preheat the oven to 450°F (232°C). Place a 12-inch cast-iron skillet into the oven to preheat as well. Prepare the Spice Rub: In a small bowl, mix together chili powder, cumin, salt, lemon pepper, smoked paprika, olive oil, lime juice, garlic powder, onion powder, brown sugar, oregano, and Tajín seasoning. Prepare the Roast: Pat the pork roast dry with paper towels. . Coat the roast evenly with Dijon mustard—this will help the herb rub adhere and add an extra layer of flavor. Generously apply the spice rub, ensuring the entire roast is covered. Bake the Roast: Carefully place the seasoned roast into the hot skillet. Bake at 450°F for 15 minutes to sear the exterior. Reduce the oven temperature to 400°F (204°C) and continue baking for about 60-70 minutes, or until the internal temperature reaches 145°F (63°C) for medium doneness. Rest and Serve: Let the roast rest for 10 minutes after removing it from the oven. This allows the juices to redistribute. Slice and serve, or shred it for tacos, burrito bowls, or any way you love your carnitas! The Dijon mustard will give it a subtle tang that complements the spices beautifully.
