In a medium sauce pan, bring to a simmer the cream, vanilla, instant coffee, and whiskey over medium heat. Give the mixture a good stir. Be sure not to boil it. As soon as the mixture begins to simmer, pour it over the chocolate chips and allow to set for 2 minutes before mixing. Whisk the mixture together until a smooth ganache forms. Cover with a lid or plastic wrap and let sit in the refrigerator overnight or at least 1 hour until firm. Once firm, use a spoon or ice cream scoop to scoop out the ganache. Gently roll the ganache in your hands to form ½ inch balls. You can do any size you would prefer. Keep in mind that the smaller the balls, the more you will have.
