
Salmon in a cream & herb sauce
Quick weekday supper, seasoned salmon in a creamy buttery garlic and herb sauce. You can serve with mash potatoes, pasta or even crusty bread. #creamysalmon Ingredients 4 salmon fillets 2 tablespoons olive oil 2 teaspoons Italian herbs 1 teaspoon salt ½ teaspoon pepper 1 teaspoon garlic granules ½ teaspoon oregano ½ teaspoons chilli flakes 1 tablespoon olive oil to cook the salmon 3 tablespoons unsalted butter 1 teaspoon garlic paste 1 cup of double cream ½ cup of chicken stock 1 teaspoon lemon juice ¾ hard Italian cheese Salt & pepper to taste 1 tablespoon fresh basil 2 tablespoons fresh parsley Parsley for garnish. Method 1. Put olive oil and and the Italian herbs, salt, garlic granules, oregano, black pepper and chilli flakes on the salmon fillets. 2. On a medium heat put olive oil in a pan and add the salmon. Cook until golden. Take the salmon out of the pan. 3. Using the same pan add the butter and garlic and cook for 2 minutes. 4. Now add the double cream, chicken stock and lemon juice and simmer for 2 minutes. Add the Italian cheese and cook for another minute. Add the basil & parsley and salt & pepper. 5.
