
Keto Bamboo Flour Bread Recipe (Low Carb, Gluten Free)
I'm so excited to show you this Keto-friendly gluten-free Bread recipe. The whole family loves it! This is a game changer if you are on a low carb or gluten free diet. Full recipe: 170g almond milk 8g yeast (2tsp) 50g oil 2 large eggs 100g mixed bamboo baking flour (80g of Bamboo Fiber and 20g of powdered whole Psyllium Husk) ½ tsp salt Steps: Measure 100g of liquid for yeast fermentation. I usually use almond milk for baking, but you can use coconut or any other plant-based milk, cow milk or even simple water too. Heat the milk until just warm (not hot). Then blend 8g of dried active yeast with the milk and leave for 5-10 min to begin fermenting before use. Measure 100g of Bamboo baking flour (80g of Bamboo Fiber and 20g of powdered whole Psyllium Husk). If you are not sure how to make this flour, watch my video about it. Please use scale to avoid all the problems associated with its density. Add ½ tsp fine salt and mix to combine. Crack 2 large eggs into the bowl. Add the rest of almond milk (70g) Then add 50g of oil. I usually use avocado oil. Beat for 1 min to combine. Add the fermented yeast Add the other liquid ingredients. Mix them with a spatula thoroughly At first the dough will seem very dry and shaggy and you’ll question if it will even come together, but it will. Knead the dough for 5 minutes, then rest it for a few minutes. When fully kneaded, the dough will be smooth. Roll lightly with your hands, use a silicone sheet as the dough is actually a little sticky. You can shape the bread into a round loaf or longer one. I shape the dough into a longer loaf. Dust the loaf with a thin coat of flour. Then make a few deep diagonal slashes in the loaf. These slashes will help the bread rise evenly as it bakes. Let the loaf rise for 30 minutes. I place the bread in my Air Fryer and turn the machine on for 30 seconds to warm it up a little bit. But you can lightly cover the dough with greased plastic wrap and leave it on a warmer place for rising. I’m going to bake it in the Air Fryer on 300F for 30 minutes at first This is how it looks like after 30 min baking. Then 375F for 20 minutes. You can bake it in your oven too. Put the loaf into cold oven and bake it on 300F for 30 min then 375F for 30-40 min.
