Easy Sourdough with Home Milled Wheat 100g Starter 372g Water 100g Freshly Milled Wheat Berries (Hard Red, Spelt or Red Fife) 400g All Purpose Flour 10g Salt 10g Diastatic Malt Powder (optional, there’s a video on my Milled Wheat playlist on YouTube that shows you how to make your own.) Mix all ingredients together. Stretch & Fold every 30 minutes four times. Bulk Proof in a clear, straight sided container until doubled. Let this dough fully double and get very bubbly, 6-8 hours in most cases. Pre Shape, Shape and Cold Proof for 12-72 hours. Score Bake at 475 for 20 minutes, recut your main score line after 5 minutes. Reduce heat to 425 and bake until the internal temp is 205F You can open bake or bake in a Dutch oven.
