⭐ Ingredients 1 bone-in ribeye steak (about 1.5 to 2 inches thick) 2 tablespoons olive oil Salt, to taste Freshly ground black pepper, to taste 2 cloves garlic, smashed Fresh rosemary or thyme (optional) 2 tablespoons butter ⭐ Instructions Remove the ribeye steak from the refrigerator and let it sit at room temperature for about 30 to 60 minutes before cooking to ensure even cooking. Preheat your oven to 400°F (200°C). Pat the steak dry with paper towels and season generously with salt and freshly ground black pepper on both sides. In a large oven-safe skillet, heat the olive oil over medium-high heat until it shimmers. Carefully place the ribeye steak in the skillet and sear for about 3-4 minutes on each side until a nice brown crust forms. Add the smashed garlic and fresh herbs (if using) to the skillet, and spoon some of the oil over the steak. Transfer the skillet to the preheated oven and roast the steak for about 10-15 minutes, depending on your desired doneness (135°F for medium-rare, 145°F for medium). In the last 2 minutes of cooking, add the butter to the skillet and baste the steak with the melted butter for added flavor. Once cooked to your liking, remove the skillet from the oven, cover the steak loosely with foil, and let it rest for 5-10 minutes.
