Fluffy Puff Pastry Cups with Decadent and Creamy Filling

Looking for a delicious and easy snacks to make at home that will impress your guests? These puff pastry cups are filled with a creamy roux that contains diced chicken, carrots, celery, and green peas. The puff pastry is cut into circles and baked to make it rise to look like a cup. Then, we cut the top and filled it with the chicken and vegetable roux. It's a great appetizer or evening snack recipe that is very satisfying to eat for you or to serve at a party for your guests. INGREDIENTS • 600 grams Puff Pastry Sheet • 300 grams Cooked Boneless Chicken Thigh or Breast (Diced or Shredded) • 100 grams Unsalted Butter • 140 grams All-Purpose Flour • 4 to 5 cups Chicken Broth • 2 Egg yolks • 1 tsp Maggi Sauce • 1 tbsp Worcestershire Sauce • 1 tbsp Yellow Mustard • ¼ tsp Nutmeg (Grated) • ½ tsp White or Black Pepper • Salt (to taste) • 80 grams Yellow Onion (Diced) • 100 grams Carrots (Diced) • 100 grams Celery (Diced) • 80 grams of Frozen Green Peas Egg Wash • Whisk two eggs INSTRUCTIONS • Prepare the pastry. Cut out 8 circles from puff pastry using a 4 ½ inch cookie cutter, and cut smaller circles from half of them using a 3 ½inch cookie cutter. Stack the cut circles on top of the full circles to double their thickness. Place them on a baking tray. • Chill and bake. Freeze the pastry for 30 minutes, brush the pastry with egg wash, then bake in a preheated oven until golden brown or for 10 to 15 minutes. Turn off the oven and open the oven door slightly to remove any excess moisture from the pastry. • Sauté the vegetables. Cook onions until translucent about 4 to 5 minutes, then add carrots and celery and cook until tender. • Combine with chicken. Add cooked chicken and season with salt and pepper. • Make a roux. Melt butter over medium heat in a pot, whisk in flour, until it becomes a paste, and gradually add chicken broth until creamy. • Season the sauce. Add mustard, Worcestershire sauce, Maggi sauce, nutmeg, salt, and pepper. • Temper the eggs. Add egg yolks one by one, stirring constantly. • Combine with chicken and veggies. Stir the cooked chicken and vegetable mixture into the sauce. • Fill the pastries. Trim the tops of the pastries and fill them with the creamy filling.
