✔️Ingredients 7 dried shiitake mushrooms 3 ½ cups water (for soaking and cooking) 2 pounds beef short ribs ½ apple, roughly cut ½ onion, roughly cut ¼ cup soy sauce 3 tablespoons brown sugar 2 cloves garlic 2 tablespoons gochugaru (Korean chili flakes) 2 large carrots, roughly cut ½ daikon radish, cut into cubes ½ cup tteok (Korean rice cakes) 3 slices ginger ¾ cup shredded cheese (optional) ✔️How to cook 1. Soak the dried shiitake mushrooms in 3 ½ cups of water for 30 minutes. 2. Soak the short ribs in cold water for 30 minutes, then discard the liquid. 3. Place the soaked short ribs in a pressure cooker with 4 cups of fresh water and cook on high steam for 20 minutes. 4. After cooking, pour out the water from the ribs and return the ribs to the pressure cooker. 5. In a blender, combine the 3 ½ cups of reserved mushroom soaking water, apple, onion, soy sauce, brown sugar, garlic, and gochugaru. Blend until smooth. 6. Pour the mushroom and apple mixture over the ribs in the pressure cooker and add the 3 slices of ginger. Cook on high steam for an additional 30 minutes. 7. Add the carrots, daikon, rehydrated shiitake mushrooms, and tteok to the pressure cooker. Cook on high steam for another 30 minutes. 8. To serve, garnish the ribs with green onions and sesame seeds. If using cheese, sprinkle it on top and use a torch or broil until melted.
