
PEPPER STEAK with BLACK BEAN RICE - Bonita's Kitchen
Welcome to Bonita's Kitchen! Today we will be making a viewers request recipe called PEPPER STEAK with BLACK BEAN RICE also known as Dirty Rice. Today's recipe is the way I would make this recipe. Enjoy SEE RECIPE BELOW! Ingredients for Pepper Steak: 1 or 2 Steaks, sliced 1/4 inch x 2 inches 1 Medium Onion, strips 2 or 3 Small Bell Peppers, strips 8 ea. Baby tomatoes 4 Fresh sliced mushrooms 1 Tbsp Olive oil 1 Tsp Paprika 1 Tbsp Butter 2 Cups beef broth 2 Cloves garlic, diced 2 Tbsp Cornstarch 1/4 Cup water 1 Tbsp Soy Sauce 1/2 Tsp Black pepper 2 Sticks celery, sliced 1/2 Tsp Ground or fresh rosemary1/2 Carrot, strips Ingredients for black bean rice: 2 Cups Cooked Rice 1 Tbsp Olive Oil 1/2 Cup Cooked Chopped Carrots 1 Medium Onion, sliced 1 Cup Cooked Black Beans, Can 1/2 Cup Tomato Juice 1 Stick celery diced 1/4 Tsp Black pepper 1 Tbsp Green onion 1/2 Tsp Onion Powder 1/4 Tsp Paprika 1 Tsp Butter 1/4 Tsp Brown sugar 1/8 Tsp Cayenne Pepper 1/2 Tsp Sea salt Pepper Steak Method: In a large HOT frying pan on medium to high heat, add butter, olive oil let warm and add strips of steak. Let sauté for a few minutes until the beef starts to brown, then add paprika, black pepper, and ground or fresh rosemary. Then add strips of onions and mushrooms toss in the pan until onions and mushrooms start to cook, toss in peppers and celery continue cooking until they as well start to soften and cook. - Then add soy sauce, garlic, baby tomatoes let cook for 1 to 2 minutes and add beef broth, in a mason jar add cornstarch in 1/4 cup water and mix. Pour into frying pan with pepper steak mixture and stir, cover and reduce heat for 5 minutes. Then serve with dirty rice, top with green onion tips and celery tips. Black Bean Rice Method: In a frying pan on medium heat, add oil and butter allow to warm. Add chopped onions and carrots, seasonings, stir for a few minutes, about 4 minutes .- Add to pan cooked/can black beans and start to warm, stirring all together for another few minutes. Then add tomato juice and chopped celery, reduce heat and continue cooking all ingredients, for about 3 minutes. Add cooked rice, seasonings and butter continue stirring or tossing in the pan, reduce heat to warm and cover until ready to serve.
