Hi friends, Season’s greetings, Zarda Pulav or Meethe Chawal is a fragrant, sweet pulav or sweet rice made with basmati rice, nuts, dry fruits, and saffron. Zarda pulao is so named because the word zard means ‘yellow’ in Persian and Urdu languages. Typical Zarda pulav has a yellow colour from using edible yellow colour. In this recipe, I have used saffron and turmeric to get that bright yellow colour and have not used any artificial colours whatsoever. Zarda rice is made during festive occasions, especially in Vasant Panchami. The recipe and the methodology shared herein is very simple, that you can also do it.
