Steak • Steak (I’m using sirloin) • Herbs (rosemary or thyme) • Beef tallow or butter • Salt Pomme purée (potato purée) • 500g potatoes • 150g milk • 200g butter • Herbs and garlic (optional) • Salt • White pepper Red wine sauce • 1/2 big or 1 small shallot • 3 tbsp butter • 1/2 cup or 1.2 dL red wine • 1/2 cup or 1.2 dL stock • Herbs • Garlic • 1 bay leaf • 4 tbsp bone marrow Other • Chives Steak I’m using a thick 1.5 inch or 4cm steak Salt, herb, beef tallow or butter and vacuum seal Sous vide 55°C (for medium rare) for 2.5h Pat dry Pepper Sear fat cap 30s, then each side 30-60s or until nice crust is formed Remove fat cap and cut into thick pieces Pomme pure Put potatoes on salt and cook in 180°C oven for 40-60min depending on size of potatoes (until fork tender) Let cool and peel Push through ricer and seive Infuse milk with garlic and herbs Cook potato with cold butter and milk, low heat until desired consistency Salt and white pepper Red wine reduction Blanch bones 5min and cool in ice bath or running cold water Cut bone marrow into small cubes Sweat shallot in butter Add red wine then reduce with herb and bay leaf Once syrupy, strain and add stock Whisk in cold butter in low heat Whisk in bone marrow Strain and salt to taste Assembly Place sliced steak and top with flaky salt Spoon on pomme purée and top with chives Drizzle sauce on edge of steak DEVOUR #food #wednesday #asmrcooking #steak #potato #sauce #sirloin #mediumrare #pommespuree #redwinesauce
