
30 Minute Hoppin' John| 30 Minute Meals| Southern Spice
Hoppin' John over rice is a dish that our family eats every New Year's day. It is part of a Southern Tradition, but also a delicious one-pot meal to have year-round. You can eat it on it's own or enjoy with your favorite Southern side dishes. We ate ours with cabbage, corn pudding, macaroni and cheese. We could barely move from the couch afterwards, but it was worth every bite! Feel free to keep it light or indulge as we did. Either way, your family will enjoy my quick and easy Hoppin' John Recipe! Ingredients: 1 diced small/medium onion 1 chopped smoked sausage (I used turkey sausage) 1-2 tbsp olive or vegetable oil garlic powder onion powder smoked paprika 1-2 cloves minced garlic salt and pepper to taste 1 drained can of black-eyed peas 1 can of tomatoes and chilis (do not drain) Cooked rice for serving Saute the onions and sausage in the oil until browned. You can cook the sausage first or save time by cooking them together. Add in garlic powder, onion powder, paprika, minced garlic, and salt and pepper. Cook for 1 minute over medium heat. Add in the black-eyed peas. Taster for seasoning and cook for an additional minute. Add in the diced tomatoes and chiles and cook for about 10 minutes to allow of the flavors to meld and the sauce to thicken. Serve over cooked rice. Enjoy!
