Turkey Leek and Bacon Pie. And pepper and mushrooms. Make it with whatever you like. It’s about using things up and translating these ingredients into something delicious and nutritious. What I did… 3 slices thick bacon - diced 1 leek - sliced and washed thoroughly 1/2 cup diced celery 1/2 cup diced sweet pepper Enough flour to absorb the bacon fat. 2-3 T 2 cups quartered mushrooms 2-3 cups diced leftover turkey 4-5 cups turkey broth 1 cup heavy cream 1 T chopped rosemary S & P as needed 1 package of store bought puff pastry sheets Cook bacon in a skillet until 90% renedered. Add leeks and peppers and sauté for a couple minutes. Add flour and stir to incorporate. Cook briefly. Stir in a little turkey stock at a time u till all is added. Bring to a simmer. Add mushrooms and turkey plus heavy cream. Add rosemary and season to taste with S & P. Simmer for 5 minutes before pouring into 9x13 pan. Top with puff pastry sheets and brush with egg wash. Bake at 400 F for 25-30 minutes or until the top is golden brown and the turkey mixture is bubbling. Serve with a salad. Enjoy!!!
