오징어채볶음 辣魷魚絲 Spicy Shredded Squid (Korean side dish)
Ingredients (材料): 魷魚絲乾 dried shredded squid 150 g 菜油 vegetable oil 2 tsp 芝麻 roasted sesame seeds 1 tbsp 紅椒粉(不辣) paprika powder 1/2 tsp For the stir-fry sauce (醬汁材料): 韓國辣椒醬 Korean red pepper paste 1 tbsp 糖漿(煮餸用)cooking syrup 2 tbsp 蒜泥 minced garlic 1 tbsp 韓國豉油 Korean Jin Soy Sauce 1.5 tbsp 砂糖 sugar 1/2 tbsp 沙律醬 mayonnaise 1.5 tbsp Note (注意): cooking syrup can be substituted with honey or maltose, but you may need to adjust the amount. Korean Jin Soy Sauce can be substituted with Chinese soy sauce. This is a cold side dish 沒糖漿,可用蜜糖或麥芽糖, 請自行調校甜度. 沒韓國豉油,可用生抽. 炒好魷魚後,要待其放涼後才吃. 放雪櫃保存. Preparation: 1. Mix all the seasonings in a bowl. This will be the stir-fry sauce. 2. Rinse and drain the dried squid. Cut them in a good size. 3. Heat a frying pan with cooking oil, then stir-frying the squid and spread them out. 4. Add sauce in the pan, lower the heat, keep stir-frying until the squid are evenly coated with the sauce. It takes about 1 minute. 5. Turn off the heat.
