Smoked Chicken Tacos on the Drum Smoker

How to make Smoked Queso and Smoked Chicken. We start off this Smoke by making a Chili Seasoning/Rub from scratch. Next up is the Chicken. We trim it up, cut it in half, and then get it seasoned. Back in the Fridge for one hour. Now we work on getting the Drum Smoker fired up and up to temp. The Chicken goes on the Drum Smoker for one hour. In the meantime we get the Queso prepped and ready. At the one hour mark we rotate the Chicken and put the Queso on. When the Chicken reaches 165° we take it off and let it rest for thirty minutes. We leave the Queso on stirring several times until it reaches around 170°. Now it's time to shred the Chicken and make our Tacos. Using soft shells the Chicken goes on first followed by the piping hot Queso. Then we add lettuce,fresh made Pico de gallo, and a fresh squeeze of Lime. YUM!
