Fluffy vegan orange cake with dark chocolate drops and raisins For baking we will need: a medium-sized classic cake pan 1 brush 1 drop of sunflower oil 0.5 tbsp.of flour For the orange cake: 500 ml of orange juice(from very sweet ripe oranges) the zest of 1 unwaxed orange(with the thick peal) 150 gr of icing sugar 150 ml of sunflower oil 400 gr of self-rising flour (sifted) 200 gr of fine semolina 1 tbsp of(vanilla powder) 200 gr of either light or black raisins 200 ml of water(to soak the raisins) 150 gr of dark choc chips 4 drops mastic(freshly pounded) 1 tbsp of baking soda How to prepare the raisins In a small bowl,place the raisins with the water and let them soak for 1 hour until they soften and double in size.Then drain them well and put them in a clean bowl. How to make orange cake We sift the flour.In a large bowl,pour the sunflower oil with the icing sugar and mix very well until the sugar is completely dissolved.Then pour the baking soda into the orange juice and mix with a small spoon.When the reaction has taken place and it rises up we add it to our cake mixture and mix gently. Add all our aromatics,the vanilla powder,the orange zest along with the mastic that we have pounded just before starting our recipe and stir.Start adding the flour,while mixing gently in a circular motion.Once all the flour is finished,add the fine semolina and stir gently.We can also mix the semolina with the flour when we sift the flour.Then add the raisins along with the drops of dark chocolate and mix gently with a plastic spatula. Lightly grease the mold with the brush and pour half a tablespoon of flour and shake it.By shaking it from all sides we help the flour to spread everywhere.Pour the entire cake mixture and put it in our oven.Bake in a really well-preheated oven for 50-55 minutes at 170 degrees set to fan,depending on how strong our oven is,until our cake gets a nice brown colour.When it's ready,we take it out of the oven and place it on thick towels on our kitchen counter until it cools completely.When our cake has cooled down,we flip it upside down on a platter.Then it's time to cut it into pieces and serve.A wonderful and very aromatic orange cake for our coffee🍊🌄🥰✨
