Mutton Korma Recipe Ingredients: For Marination: 500g mutton (bone-in) ½ cup yogurt 1 tbsp ginger-garlic paste ½ tsp turmeric powder 1 tsp red chili powder ½ tsp salt For the Gravy: 3 tbsp ghee or oil 2 onions (thinly sliced & fried until golden brown) 2 tbsp cashew or almond paste (optional, for richness) 1 tsp cumin seeds 2-3 green cardamoms 1-inch cinnamon stick 4-5 cloves 1 bay leaf 1 tsp coriander powder ½ tsp garam masala ½ tsp black pepper powder 1 tsp kewra water (optional, for Mughlai flavor) ½ cup water (adjust as needed) Salt to taste Method: 1. Marinate the Mutton: In a bowl, mix mutton with yogurt, ginger-garlic paste, turmeric, red chili powder, and salt. Cover and let it marinate for at least 1 hour (overnight for best results). 2. Prepare the Gravy: Heat ghee/oil in a deep pan. Add cumin seeds, cardamom, cinnamon, cloves, and bay leaf. Once aromatic, add the fried onions (crushed or blended into a paste). Sauté for a minute. Add the marinated mutton and cook on high heat for 10-15 minutes until it browns. Stir in cashew/almond paste (if using), coriander powder, black pepper, and garam masala. Add water, cover, and let it simmer on low heat for 45-50 minutes (or pressure cook for 4-5 whistles). 3. Final Touch: Once the mutton is tender, add kewra water for an authentic Mughlai aroma. Simmer for another 5 minutes, then turn off the heat. 4. Serving: Garnish with fried onions and fresh coriander. Serve hot with naan, roti, or fragrant basmati rice.
