Cook over medium-low heat, stirring continuously, until a thick, smooth paste forms. Remove from heat, cover, and allow to cool before using. Prepare the dough: Warm milk to 90-105°F (32-41°C) a separate bowl. Add active dry yeast, stir gently, and let it sit for 10 minutes to activate. In a mixing bowl, combine the cooled tangzhong, activated yeast, 1 large egg, bread flour, granulated sugar, powdered milk, salt. Using a dough hook on low speed, mix until the dry ingredients are fully incorporated. Cover the bowl and let the dough rest for 25 minutes. After 25 minutes, add butter and mix on medium speed for approximately 24 minutes or until the dough pulls away from the sides of the bowl and forms a smooth, elastic ball. Cover the bowl with plastic or kitchen towel and let the dough rest for 1 hour at room temperature. Punch down the dough and divide into 14 equal pieces. Shape each piece into a tight ball, then cover and let the dough rest for 10 minutes. Flatten into a disc. Roll each disc into a log, seal the seam, and place the logs seam-side down in a greased 9x5 inch loaf pan. Cover the pans with plastic or kitchen towel and let the dough proof for 60 mins, or until nearly doubled in size. Preheat your oven to 350° F towards the end of the proofing time. Brush the tops of the loaves with a beaten egg wash (1 egg yolk + 1 tbsp milk). Bake for 25-30 mins, or until the tops are golden brown. Remove the loaves from the pan and let them cool completely on a wire rack before slicing. For a Raising Canes’-Style Finish: Once the bread is fully cooled, slice it into your desired thickness. Heat a large skillet or griddle over medium heat. Add a generous amount of salted butter, allowing to melt and bubble. Place the bread slices in the skillet, ensuring both sides are coated in the melted butter. Toast each sides for 1-2 mins, or until golden brown and crispy, flipping once. This method will give that signature Raising Cane’s crispy, buttery exterior, enhancing the overall valor and texture. ——————————————————— Music track: Last Summer by Aylex Source: https://freetouse.com/music Music for Video (Free Download) Music track: Feels Like by Eric Lund Source: https://freetouse.com/music Vlog Music for Video (Free Download)
