The invention of egg white bread is a huge victory for the keto and carnivore world, but I've never been a fan of the texture and flavor. To ensure it’s not an issue with the alkilinity of the mixture add a 2nd teaspoon of vinegar to ensure the proper chemical reaction. Also be careful not to over-measure the baking soda as it can have a strong flavor. If you still experience this it’s likely a contamination off your eggs or egg white powder.
